How early is too early in booking hotels?

Hey travelers! I hope to get some free help when studying abroad in Vienna!

How early is too early in booking hotels? I really want to go to Budapest and Prague; do any of you know any good youth hostels i can look at? Same as with Salzburg and Munich.

Is it better to pay with credit/debit cards where you can or Euros’?
